Homemade coconut milk - the easy way

I love to use coconut milk in my breakfasts as well as in my matcha. However, most store-brought coconut milk is usually filled with unnecessary additives that can be harmful to your gut and even spike your blood sugar levels.

Therefore, I love to make my own homemade coconut milk that is luckily both easy and affordable to make.

Usually, you would need the flesh of a coconut to make coconut milk - however, where I live coconuts do not hang on the trees outside and therefore I use organic shredded coconut that you can buy in most stores.

Coconut is not only delicious to both eat and drink - coconut offers a variety of health benefits due to its unique nutritional profile. Some of the benefits of coconut includes:

  • Rich in vitamins such as vitamin C, E and B

  • Rich in minerals such as magnesium and potassium, which is also why coconut is considered a natural electrolyte, that can help with hydration

  • Rich in healthy fats

  • Healthy for skin and hair

I love to use this organic shredded coconut from Reformhaus for this recipe!


Recipe for 1 liter of coconut milk

  • 1L of filtered water

  • 50g of organic shredded coconut (affiliate link)

  • Optional: a pinch of pure vanilla extract or powder

  1. Bring the water to boil in a saucepan - take off heat once it is boiling

  2. Let the water cool down to around 80°C / 176°F

  3. Add the shredded coconut and let it soak for 5-10 minutes - the warm water helps to pull the fat out of the shredded coconut

  4. Add the mixture to your blender including vanilla, if you choose to use that - blend for one minute

  5. Sieve through a fine-mesh sieve, a cheese-cloth or a nut milk bag

  6. Pour into bottles and keep in refrigerator for 3-4 days


Serving

Coconut milk can be used in a variety of ways. I usually use my homemade coconut milk in my breakfasts, where I either use them in my chia pudding, smoothie bowl or porridge. I also sometimes use it in soups or other dishes - just remember, it is not as creamy as store-brought coconut milk in a can is.

Lastly, I use it in my matcha, which tastes absolutely amazing and reminds me of traveling through Bali, where they would often make matcha with coconut milk.
