Healthy Banana Pancakes

Banana pancakes holds such a special place in my heart and to be able to make them into a healthy, nourishing, and delicious breakfast makes me so happy! They are made with only a few simple ingredients and come together in less than 30 minutes.


Buckwheat Flour

Buckwheat flour is a gluten-free, nutrient-dense alternative to traditional wheat flour. Packed with protein, fiber, and essential minerals like magnesium, it’s perfect for making these healthy banana pancakes! A great option for those seeking a gluten-free, nourishing flour!

Gluten Free Oats

Gluten free oats are a safe and nutritious option for those with gluten sensitivity or celiac disease. Packed with fiber, vitamins, and minerals, they make a perfect base for this healthy recipe!

As always, I recommend choosing organic - these gluten free old fashioned oats from Nature’s Path is a great choice!


Recipe for 2 persons

  • 2 Bananas - preferably ripe or overripe

  • Oats - 40 g

  • Buckwheat Flour - 100 g

  • Eggs - 4

  • Baking powder - 1/2 tsp

  • Cardamum - 1 tsp

  • A pinch of pure vanilla powder

  • A pinch of salt

  • Butter for the pan

  1. Mash the bananas in a bowl.

  2. Add all the other ingredients (except butter) and mix with a whisker.

  3. Heat a pan and add some butter. Cook your pancakes 2-3 minutes on each side.

  4. Enjoy your healthy, protein-rich, banana pancakes with your favourite topping or see inspiration for a berry sauce below!


Serving

I love serving these banana pancakes together with a berry sauce. It makes a perfect topping for the pancakes without using sugar! Simply blend an apple with berries of your choice and water - I usually use raspberries, blueberries or a mix of both!
