This buckwheat porridge bowl comes together in less than 20 minutes and will leave you feeling energized and ready for the day. It is so versatile, as you can top the porridge with your favourite toppings and change the toppings through time, so you won’t get tired of it. Buckwheat porridge is furthermore a great gluten-free alternative to regular oat porridge.
Buckwheat
Buckwheat is a gluten-free plant source, which is high in protein and contains all 9 essential amino acids, making it a complete protein. Furthermore, buckwheat is rich in zinc, high in antioxidants and is easy on the gut, which can help improve digestion.
Including buckwheat in your diet can be a great and easy way to get more protein and ensuring, that you are getting all your essential amino acids, which are the building blocks, for making protein.

Recipe for 1 person
1/2 cup of buckwheat
1 cup of water
A pinch of salt
Rinse the buckwheat thoroughly.
Add the buckwheat, water and salt to a small pot - bring to boil.
Once boiling, lower the heat and put a lid on - let it simmer for 10 minutes on low heat.
After 10 minutes, turn off the heat. Do not remove the lid - let it steam for another 5 minutes.
Serve in a bowl with your favourite topping - see inspiration for toppings below.

What I love about bowls like these, is that you can top it with almost anything that you have in your pantry.
Sometimes, I will add my homemade coconut milk or almond milk - you can also add a different type of milk, if you want to.
For toppings, I usually go with 85% dark chocolate, hemp seeds for extra protein and either pumpkin seeds and flaxseeds or sesame seeds and sunflower seeds, depending on where I am in my menstrual cycle.

I always top off my breakfast bowls with some sort of fruit or berries - my favorites are apples, pears, blueberries or oranges. Try adding fruits or berries that are in season where you live.
